Researchers from CoRFilaC (Italy) and INRA (France) came up with the idea to develop and coordinate an international scientific network through a “World Wide Traditional Cheeses Association”. A scientific community aiming to protect traditional cheeses and to work together to assess the characteristics of worldwide traditional cheeses and cheesemaking technology along with the importance of traditional tools, and to educate farmers, consumers and researchers to the real meaning of these cultural products. social goals (Statute).
